Artichoke

Common Name: Artichoke

Scientific Name: Cynarus scolymus

USDA Hardiness Zones: 8 to 10 (can be grown as an annual in most zones)

Approximate number of seeds per gram (ounce) : 20 (560)

Sun: full sun

Water: keep soil moist during germination and water frequently after germination, ensuring that plants are not in standing water.

Soil: plant 1/4 inch deep, prefers a fertile, well-drained soil.

Temperature: 21 to 27 degrees Celsius (70 to 80 degrees Fahrenheit)

Spacing: for growing to maturity, 4 to 6 feet in rows about 6 to 8 apart

Germination Time: 10 to 20 days

Artichokes grow best in frost-free cooler, coastal areas, but can be grown in areas with at least 100 frost free days.  Allow plenty of space as artichoke plants will spread to up to 6 feet in diameter.  In zones 6 and below, artichokes are grown as an annual, so reducing the spacing is appropriate as the plant will not reach full size.  The artichoke is an edible bud and should be harvested early when the buds are relatively compact.  Once the buds have spread, the tracts develop a tough and stringy quality.
