Arugula is a leafy green used for salads.  It grows best in cooler climates and germinates at temperatures which make it ideal for an early spring or autumn garden.  Regular watering is recommended as arugula has a shallow root base.  Harvest arugula when the leaves are still smooth.  The underside of the leaves will eventually become fuzzy at which point the leaves are tougher and have a stronger taste.
