Spinach is a cool season crop that grows best in damp conditions.  Sow seeds in the spring as soon as the ground can be worked.  If sowing indoors, start the seeds three to four weeks prior to the frost.  Keep the soil evenly moist throughout the season.  Spinach leaves should be chilled immediately after harvest as they are very perishable.
